Chocolate and chilli… A weird, yet scrumptious combination, originating years ago! We’re talking way back in Mesoamerican times, where their main use for the cacao bean was to grind and mix with water, honey, vanilla, chilli and other spices to make a chocolate drink! Interesting, hey? Well, I find it interesting.

I remember growing up having sweet little cereal bites made out of cornflakes. I had no idea what they were called, but apparently they’re called Honey Joys, and I just created a loaded, gluten free and vegan friendly version of them! Go me!

While I didn’t have the biggest sweet tooth growing up, one thing I absolutely loved was a solid slice of my Mum’s cheesecake. And then my sister began making cheesecakes of a HUGE variety (Toblerone, being her speciality) and I really enjoyed them too! But growing up with hereditary high cholesterol and being dairy intolerant made this a rare delicacy.. And a painful one at that!
I haven’t made many one-pot meals (no pasta based dishes, anyway) that I can remember, and after whipping this bad boy up, I am incredibly confused as to why! IT’S SO EASY! And delicious. And well, hello?! One-pot means less dishes, and I don’t know about you, but that’s always a win in my book.
