Quinoa Flake Honey Joys

I remember growing up having sweet little cereal bites made out of cornflakes. I had no idea what they were called, but apparently they’re called Honey Joys, and I just created a loaded, gluten free and vegan friendly version of them! Go me!

Such a simple little snack to whip up, perfect for lunch boxes (adults lunch boxes, too!), or just a quick, sweet snack to grab and munch and go! But not sickly sweet, of course, and much healthier than the traditional version too!


Instead of using cornflakes, I decided to use Orgran Health + Nutrition Quinoa Flakes to keep this recipe gluten free. These flakes are so lovely, and add a different, more neutral flavour to this delicious snack, leaving you with many different options for additional flavour. Almond butter and rice malt syrup are the two main ingredients holding these joys together, alongside a touch of coconut oil, but feel free to make this a nut free snack by simply subbing the almond butter for a seed butter, or more coconut oil.



I’ve also chosen to mix these flakes with some dried fruit and cacao nibs, for crunch and sweetness, but of course, you could keep these as simple as you like.Β  Chocolate chip joys would be an amazing combination, or even keep it simple with a crunchy peanut butter! They’re amazing in flavour though, so get into the kitchen this week and give them a shot. In your time of snacking needs, I promise you will not regret it.


RECIPE:Β Quinoa Flake Honey Joys
Vegan. Gluten Free.
Servings: 10

2 cups Orgran Quinoa Flakes
1/4 cup chopped dried fruit
3 tblsp hemp seeds
2 tblsp cacao nibs
1/3 cup almond butter
1/3 cup rice malt syrup
2 tblsp coconut oil, melted
1 tsp cinnamon

  1. In a large bowl, mix together the Quinoa Flakes, dried fruit, hemp seeds, cacao nibs and cinnamon.
  2. Separately, mix together almond butter, rice malt syrup and coconut oil until smooth. Pour over the dry ingredients and fold through, crunching up some of the flakes for extra texture. Hands may be necessary!
  3. Line a muffin tin with patty cases and scoop the mix into each case. Refrigerate until set. Vegan Honey Joys are now ready to be eaten! Keep refrigerated.
