A sweet and nutty take on a classic side dish, this slaw is delicious, simple, and packed full of nutrient dense ingredients that will compliment just about any meal!
It’s a recipe I made a while ago (realistically, only a few months), but it’s fast become a favourite in my ‘side dish’ rotation. The combination of grated apple with the traditional slaw vegetables, cabbage and carrot, brings this dish to a different level of goodness. Instead of the typical mayonnaise or vinaigrette that you would usually associate with slaw, I’ve chosen to use something a bit heartier, that also provides extra texture and kick to the salad.

Well, if you guessed peanut butter, you would 100% on the money!
This dressing combines few simple ingredients including all natural peanut butter, tamari, and a dash of sriracha for a slightly spicy kick to bring the ingredients together. And let me tell you, it brings them together in such perfect harmony, you’ll forget all about those slaws you’re used to eating.

RECIPE: Nutty Apple Slaw
Vegan. Gluten Free. Oil Free.
For the salad:
Green cabbage, quarter of a head
2 large carrots, peeled
2 apples, peeled and core removed
1 tsp fresh lemon juice
For the dressing:
2.5 tblsp all natural crunchy peanut butter
3 tblsp water
1 tblsp tamari
1/2 tsp sriracha
1/2 – 1 tsp minced ginger
Cracked pepper, to taste
- To make the salad, grate the apple and using a tea towel, squeeze out as much juice as possible. Place in a large mixing bowl and combine with the teaspoon of lemon juice to keep it from turning brown.
- Shred the quarter head of cabbage, and peel and grate the carrots. Add these to the apple and stir to evenly distribute. Set aside.
- To make the dressing: Whisk all ingredients together until smooth.
- Pour two thirds of the dressing over the slaw ingredients and thoroughly coat. Add more if desired, otherwise, keep aside to add extra when serving!
